How a Bunch of Güeros Ended Up Making Birria
We started our family the way a lot of good stories start — young, married, and figuring it out as we went. Nathan and Kim, married in Arizona in 2004. Two kids in, we packed up and moved to the North Shore of Hawaii, where we spent five years living in paradise and welcomed our next two. Hawaii will always be part of who we are.
Eventually the road led back to Arizona, and then north to beautiful Cache Valley, Utah — where we put down roots and started a little family business called GÜEROS.
So why does a family like ours make birria?
Years before any of it, Nathan spent two years in Mexico as a missionary — Torreón, Durango, and Zacatecas, from 2001 to 2003. He came home loving the Mexican people, and loving their food even more. Kim is Latina. Put those two together and you'd expect... well, not this: every one of our kids was born with blonde hair and blue eyes. In Mexico, that's a güero. So the name picked itself — a bunch of white boys making birria tacos, and making them with the respect they were taught: slow-cooked, honest, and meant to be shared.
We love God, family, and community, and He has blessed us beyond measure. We didn't start Güeros just to sell tacos. We started it so our boys could learn what work is — entrepreneurship, work ethic, and the chance to earn and save toward serving missions of their own, the way their dad did.
So when you step up to our window, you're not just getting lunch. You're getting a piece of everywhere we've been, made by the family that lived it.
